StyleThis Continental style Syrah has layers of aromas such as rose petals, black cherries, cloves and freshly milled white pepper. The wine has got tremendous succulence and richness on the palate and ends in a pleasant, long and ripe aftertaste. MicroclimateCool continental microclimate. Grape analysisBalling: 25-26ºB VinificationThe fruit was cold soaked for 10 days at 8º Celsius under a CO2 blanket. After 10 days the desired colour was obtained – therefore a fermentation temperature of only 25º Celsius was necessary. A yeast culture of WE372 was used to start fermentation. During fermentation the wine was pumped over 3 times daily to maintain a low temperature in the cap of solids. These low fermentation temperatures ensure the best quality, typical Shiraz aromas. When it was fermented dry, the wine underwent a further maceration on the skins until the extraction was sufficient. Both free-run and press juice were used.
